So yeah, my tip would be to watch some youtube videos, I'd recommend a youtuber called Arumba, he's currently got a new series going for the new expansion, so maybe somewhere to start off. Once you get a feel for the main mechanics I would then recommend just playing as a country like Castille or the Ottomans on Very Easy mode just to pick up the game initially.
I think i have the 2nd and 4th Expansion but would want to play with them off to just learn the core game.
Yea i've heard Arumba is really good at 4X games (is that the right genre?) . Thanks for the tips, i'll try to sink my teeth into it and see how i do .
To me more content is better, you can do more. Stellaris is a pretty new game with only 3 or 2 dlcs so I haven't played it tons honestly and I have been to late game in Stellaris but because what you can do, I like EU4 more.
EDIT: I like CK2 better actually so whoever told you that it's more complex was kind of lying but it is super easy to start within a kingdom like France and steamroll the world with relative ease. If you buy CK2 first I personally have tons of knowledge in it over the knowledge of EU4 and Stellaris put together. Add me if you care to more about these games. I have them all, I don't mind sharing any info about any of them. Have a great one if that's a negative.

While it is better than at launch and quite relaxing to play, with plenty of rooms for improvments, i still find EU4 way better.
Main problem with Stellaris is war, 1 battle decides the whole outcome with no real way to keep a position or defend.
Stronger fleet always wins, and it is a no match.
Diplo is also very weak.
Also, but there isnt much to do about it, France, Russia or Japan speak more to me than Qarax Imperium or Trix Confederation...
