Castille is great to learn every area of the game, great by herself, even better protected by France.

Or take the ungodly alliance of France and Ottomans

For the second playthrough, France (experienced) + Castile (new).
He could learn basic things like wagin wars, imprtance of trade, colonization, maybe some vassal managment with scots/irish minors
He might have some issues with succesion and rebellion if your friend plays as england. though I suppose you could help him through the war of roses.

I think the friend will have less fun if you're playing a super power and he's relegated to just following you along. You should try to make it a challenge (assuming you're already a master of the game).
In that regard I'd say avoid the super nations of France and Ottoman and aim towards something more... unique. Like play Castille yourself and let him play Morocco and beat up Portugal/conquer north africa and face the constant threat of Ottoman invasion while trying to expand into west Africa.
Basically any nation where he's playing a lesser power but you're providing a buffer on one side so he doesn't get wrecked on his first playthrough.
Another fun alternative would be Vij and Bahamains, with you playing vij but not expanding north much, instead focusing on exploration and colonization / conquest of Africa (or something stupid like that). Basically giving him the buffer he needs to expand north and deal with a likely problem with Delhi, Timurads, and eventually Ottoman or Ming.
