The AI calculates it's chances in a war on the combined strength of it's allies vs the target.
The important values are size of army, aviable manpower and military tech (or ideas that influence combat)
Conversely, if you get mauled in a bad war and your army is significantly reduced, the AI can and will jump on the opportunity to kick you while you're down.
Having one strong ally as an Insurance will iften discourage them
Or find someone else who can carry a big stick.
Bruh, in my experience AI in Civ5 tend to declare wars way more often than in EU4. I had very few times when AI has declared war on me, and it was only because in lower patches, where I was either bankrupt (had no morale and little troops) or was stronger than me 2x or even 3x more times.
