How does imbuing a weapon work?
I think imbuing is the right word anyway. What i mean is, say i make a weapon lightning, do i have to then use twinkling titanite to upgrade it? Say I've already upgraded the weapon to +7, does it become a lightning +7 or does it reset back to 0 so i have to re-upgrade it all over again.

So i see a fellow Demon's Souls player here? it was kinda confusing at first back then, but no it doesnt reset, and you can revert it if you wish.

No, this is my first Souls game. So if i make my weapon elemental, it definitely doesn't put the +x back to +0?

It stays at the level you have already upgraded it to. Plus, swapping it out for Mundane etc. will NOT reset it either. Good luck :)
No. Upgrade level and imbument are seperate.

Okay thanks. In that case, what would you recommed imbuing my mace with? Or should i change to a different weapon? I'm not hugely far into the game, about 17 hours but I'm quite a good gamer so I must be kind of far-ish in now.

it depends on what your stats are. the basic mase is pretty good late game if you have been upgradeing it and have good str (if you dont have good str you can just make it raw and it will still be good).

It depends on your stats elemental infusions decrease physical damage and scaling from weapons in exchange you get some elemental damage and elemental scaling, this also means your weapon deals two kind of damage and as such get's reduced twice by the physical and elemental resitance of the enemy.

Do remember that enemies do not take increased damage from a given element like most RPG's they either have low or high defenses against them, without the stats to back up the infusion your weapon will mostlikely end up dealing less damage regardless of the weapon getting 100ish extra damage from another element.

I would recommed reading a wiki aboyt what each infusion does so you can choose the best for your stats.

Well I did some reading and I'm not sure if it's powerful or not but I'm thinking I'd be better off Picking up the Large and Great Clubs, respeccing slightly and then powerstancing them. They sound really really powerful. However the Mastodon Greatsword looks great as well, although in theory i would carry all 3 weapons around with me for using in different situations.
My question is whether there is enough titanite in the game so that i could upgrade all 3 of these weapons to +10 - bearing in mind I've already upgraded my mace to +7?

When you clear Iron Keep, Shards become unlimited and 10 Large Shards are buyable from the Stone Trader. She sells unlimited Large Shards after clearing Drangleic Castle (which I guess means beating Looking Glass Knight) and 10 Chunks become available to buy from the Stone Trader after clearing Undead Crypt. When you beat the final boss, you can buy unlimited Titanite Chunks (again from the Trader). She also sells 1 Slab after clearing Undead Crypt.

So, after beating the final boss, you can upgrade any weapon you like to +9, since you can easily get the mats. For Slabs though, you have to go out and hunt them down yourself.
Just remember when you infuse a weapon, it gains scaling in your element of choice AND loses it in it's standard scaling - STR or DEX. If you remove the infusement, you WILL NOT regain the scaling lost originally, but you will obviously lose the elemental scaling.

Thus, a weapon you have infused then cleared will be significantly weaker than a standard weapon of the same type and quality.

There is really no need or rush to infuse anything. Standard is perfectly fine no matter what stage of the game you're at. Standard +10 weapons also gain the full bonuses from physical buffs like ring of blades. Weapons that only go to +5 and/or are infused get reduced benefits from physical damage buffs.
