I am not sure why he attacks, but I figured it was some kind of test to see if the player is worthy of going in Aldia's footsteps and trying to find a cure that doesn't involve lighting the flame, Aldia doesn't want the Age of Dark to come to pass so he wants to make sure the player is equal to him in power.
When you take the throne, you can either relink the fire or let it die (much like the heralds' "you can either embrace or renounce this" dialogue) but if you choose any if the two choices, the cycle of the Curse will still continue. If the Dark age would come, enough souls and humanity will gather on the first flame and reignite it on its own.
Aldia believe that there is a way to break the Curse through other means. He found a way how but he lost everything in the process and all he can do is watch and guide our chosen undead.
Aldia appears to be a tree, similar to the Fallen Giants. Dead but still alive. He no longer needs souls to live (which explains why he does not drop any when "killed").
To how we find a way to free humanity from the Curse is a whole new journey. This time with Aldia to guide us.
He was explaining his goal to us while also telling some facts about the flame, like how humans assumed a "Fleeting Form" during the age of fire.
The players' choice does matter to him. His attempts are no longer an experiment. He truly wishes the player to leave the throne find a way to make mankind free from the curse without being dependent on the First Flame.
But if the player does accept the throne, he will be back in the next cycle and would do the same attempt to the next would-be monarchs.
