You can lure them one by one in NG+ as well, it is just much harder, it is a matter of half a step if I remember correctly. But I see your point in my idea on AI behaviour being a huge pain for a lot of players. And I doubt that I would stay calm with it the whole time as well to be honest, slashing through the Wharf with my longsword for example and then getting brutally murdered the next time I go there with a sowrd in my hand. But that is the only way I can see a game getting harder without the difficulty being artifically rised.
I attempted a SL1 runthrough of DS and was successful. This game I wouldn't even dare try it.
But aside from that I can honestly agree with what most people said about the game being punishing when it comes to making mistakes but it also staying fair in almost every situation.
