a few options for daggers:
Royal Dirks for decent damage and increased range
Shadow Daggers for more damage provided you have the STR to make use of the scaling
Mytha's Bent Blades for poison/toxic buildup, will require Crest of the Rat and Sanctum Soldier Gauntlets for more poison build-up

you should focus on getting RoB+2 and Flynn's (provided your VIT is under 15, or under 11 with Third Dragon ring) to deal some extra damage with the daggers, other than that it's the usual powerful rings (Cholranthy, Third Dragon ring, Stone Ring)

armour doesn't matter as long as it looks nice, but if you're running daggers as your main weapons then make sure it's light because you'll be rolling a lot. if you want to be super optimised then go for parts of the Alonne set, it has pretty decent protection for its weight
Mundane bandit knives

What kind of stats/level are you looking at? A dagger build at level 150 is gonna be a lot different from level 500.

watch out while using your build - they are really easy to parry

Well if you are going for max, you can pretty much wear whatever you like the looks of. Armor in this game doesn't make an enormous difference in the long run. Definitely go mundane though as soon as it is viable, makes it a lot easier to actually do non-riposte/bstab damage.
