Assuming you're on your first playthrough, you should know that there are quite a few of both Soul Vessels and upgrade materials in the game so ultimately it doesn't matter what build or weapon you use, you can easily upgrade all three to max power and change builds several times over the course of a single playthrough.
Upgrade materials are particularly plentiful if you have the first DLC, Crown of Sunken King. It allows you to infinitely farm 100% guarantee drops of 3 Twinkiling Titanite and 3 Petrified Dragon Bones, both of which are used to upgrade some of the most powerful weapons in the game. Regular Titanite is likewise plentiful and you are not going to run out of upgrade materials.
Maybe i should just go a dex build then. Lol.
That aside, if you want a good, easy weapon I can recommend the Claymore. You can buy it from Vengarl in the foggy part of Shaded Woods. It's a quality weapon (scales off both Str and Dex) and is one of the most popular weapons used by people. It has a good moveset too, R1s are wide swings and R2s are thrust attacks, a very solid setup.
