(Example: A sorcerer with base vitality can wear the full set, plus a longsword, kite shield (100% phys Block), catalyst and short bow without a royal soldiers ring and still be at mid roll weight load (under 70% equip load), with fairly good protection when upgraded sufficiently.)
For a LONG time:
Head: Vengarl's Head
Chest: Penal Armour (this is where you get the huge weight saving, but get epic resistance stats).
Arms: Drangelic --> Alonne Knight Gauntlets
Legs: Dark Leggings --> Alonne Knight Leggings
Though I've just swapped out the arms & legs for Alonne Knight Leggings & Gaunlets (cause you can +10 them vs. Drabg & Dark and so I don't need twinkling titanite YAH!). (or whatever their correct names are). Though I wish I had enough Vitality to also use the Alonne Captain's plate that dropped.
Basically I just mix in some heavy armour on legs & arms for poise and physical, and then use lighter high quality chest piece for the elemental resistances.
I haven't really found a leg piece that mathematically stands out strongly, but I use black leather since it has a nice mix of decent defense and status protection.
