1: don't lock on, makes it much harder to stay behind him
2: try to stay to his left (your right) side behind the leg, take a few swings, he will miss you with his side sweep and when he lifts his leg just roll to the other leg to avoid it, then get back behind his left leg

Welcome to the cheaty hour, staring yours truly. If by some miracle of God you have an abundance of Posion arrows, the Black Hunter bow and the Hawk ring, then this Boss will be over for you in no time.
If/when you get these items, do the following;
-Trigger that boulder. there's a half-way point that'll trigger that boulder. It's actually the King's head on the statue to the left of the Giant Lord.
-The boulder will stop right at that half-way point. And litterally to the left of that half-way point (You facing the Giant Lord) is a little platform you can stand on. It's not the elevated platform, but the one on the same level the giants were being killed on.
-With items equiped, and tons of arrows at your disposle, you can take out the Giant Lord without him kicking your butt. (He'll do one, ranged attack which won't be able to reach you)

Edit: Idk the stats needed for the Black Hunter's Bow, but if you have two soul vessels, then consider using them if need. Or grind for the levels.
Did you guy bypass the other enemes in that area? Seems like to kill everything and the boss will take longer than the 5 minute time slot.
I usually run up to the first battlement, wait for the head to roll, then sprint past anything left alive, giants won't follow you to the boss
