No. The only time I ever kill Steady Hand McDuff is at the very end of the game and i'm going to actually go into ng+ because he drops a titanite slab, even if he already gave you one for spending a ton of souls with him so I don't know if he will take the dull ember in ghost form (if you didn't know npc's can be "revived" at a grave that shows up where you killed them after about 6 in game hours). Probably not though (to punish you for killing an npc before progressing their development). Like if you kill Maughlin the Armorer before he upgrades his stock he will not upgrade it in ghost form, even if you buy like 20 pieces of the crappy armor he has in stock.
You can't infuse armor with infusion stones. Only weapons, staffs, chimes, and shields. If you want armor with high poison resistance, do research on what armor has high poison resistance, find out how to get the armor, and then fully upgrade it to maximize it's poison resistance. Enemies like the manikins in Earthen Peak have armor with high poison resistance (usually assassin-like enemies, like the Suspicious Shadows, which only show up in NG+ inside the Flexile Sentry boss fight). Also leather armor sets always have high poison resistance (like the black leather set and the wanderer set).
