Spend souls on gear or level early game?
I see lots of souls are needed to level up a bit of stats, should I spend everything on gear early game?

Stats, you will always be finding new gear.
level every single dam time, most of the weapons you will be using only appear mid game.
Nope. I should think not. Having playing to the first boss myself on the PS3 release on a friends console. the gear you find in the valley of the giants is more then enough (Un-upgraded) to get you easly through the first few area's of the game. Secondly. you level up really quickly. I'd suggest getting on a good route of stat progression then start grinding souls for weapons.
At the beginning level up, only later on upgrading gear will become core to your build (expecially if you care about not going over the 150SL cap)
I believe the answer is "Yes."

I stay away from upgrading armors until I find a set I want to keep for the long term. However, I will upgrade my weapons early unless there is something I know I'll have replaced soon. An example would be the Sorcerer Catalyst that the sorcerer starts with. It's the best catalyst you'll find until late game, so why not upgrade it?
Balanced for me, buy a couple things and keep them for a whole long time until I get the pieces I really want to use.
I mainly upgraded my weapon and shield and only increased armour stats when the previous two were either maxed or I didn't have the materials for it.

It's totally viable to stick to your starting weapon, too. I completed the entire game with my starting weapon as my main weapon. So if you really like the moveset on your starting weapon, by all means upgrade it. :3
