How does bleed work.
Okay so I'm running dual bleed embued claws with shadow gauntlets and blood ring and regardless of how many times I hit people they don't lose chunks of their health. I hear their heart beating but they don't really seem to have been hindered. Only times I've won was because I stunlocked them off the bridge in the BoB arena.

Doest it work based off the raw physical damage the weapon does? Someone brief me on this.

Not sure, but I think Bleed scales with DEX.
It reduces an enemies' max stamina for a short time, and should deal a bit of HP damage too.

Once the Bleed meter reaches full, it will cause damage to the target's HP on a percentile basis. It will also reduce the maximum stamina of the target to 75% for 5 to 10 seconds. Dexterity and Faith will improve the effect of Bleed.

Regardless of recasting with high faith and dex my damage output is still laughable. My only wins still consist of stunlocking people off the bridge.

Bleed used to be a really scary thing in Dark Souls because it would literally disappear with half your healthbar, now it's not really noticeable. I have a feeling it's a rather useless effect compared to Poison.

Poison is quite good in DaS 2, but even that is on the weak side. If the enemy is carrying moss it won't do much good.

Poison is quite good in DaS 2, but even that is on the weak side. If the enemy is carrying moss it won't do much good.
Poison is literally Toxic from Dark Souls, and will eat your health bar in seconds if you don't take care of it. With bleed you don't even really have to carry anything. In Dark Souls 1 you had Red Moss which reduced bleed build up, but you don't need that here.
