First off, there are multiple status windows in the infusion UI. The first page shows you the splits, but not the scaling, as you've seen. You can right click and select "switch" to go to page two which will give you the total combined damage. Using this page you'll be able to tell if the infusion is helping or hurting. Keep in mind that you can only change the status page before you select a weapon and that you must have the weapon equipped in order for combined damage to display.
Second, don't worry too much about picking the wrong infusion. They aren't permanent and any of them can be applied over another, including palestone which removes infusions.
Lastly, it's generally best to imbue a weapon that already has an elemental component with the same element. In your case with the Heide Knight Sword, lightning will probably be your best option. Experiment for yourself though to see what works best for you.
as far as infusion goes you're probably best off with Lightning - Since the sword comes with lightning, it gets more bang for it's buck out of Lightning infusion. Combine with Sunlight Blade or Gold Pine Resin for even greater bonuses.
