Offline mode. Other than that, you can't.

While I understand you want to immerse yourself in the world more, Online is a part of the world and it's storyline. How multiple worlds intersect and connect at random points. Those with the knowledge can leave warnings, or summon signs, in an attempt to aid or harm others whose worlds connect to yours. Knight Solaire was a prime example for Dark Souls. Upon meeting him he explained how the worlds divided, converged and mixed to allow summoning and invasions. It is integrated into the games story and In My Honest Opinion....should be part of your immersion into the game.

While Offline Mode will remove all of these for you....it will indeed take away from the Immersion that you so desire by removing a key element to the storyline.
