He is weak to Strike, Thrust and Lightning attacks.
Meaning that, in theory, the Heide Spear or Lance(s) (since it has both thrust and Lightning) are easily the best weapon against him. Aside from that you can either tank him with a Gyrm Greatshield as was stated above or better yet, practice your dodging with him.
I don't it to sound like I'm saying "gid gud" but the Smelter Demon Choreographs his attacks a lot and he has very little variation in them. If you time them and always remember to dodge TOWARDS his attacks (not the opposite side) then he becomes a trivial boss. Keep practicing that dodging and I'm sure you will eventually get it. The most you must be careful is if he suddenly decides to do a jumping attack, which CAN surprise you.
If you want to do it alone: Get a Shield and manage your stamina. Don't get greedy: 1 or 2 strikes if you see an opening and then back off.
Learn the time, when you can heal up. Learn to dodge most of his attacks and block the ones you cannot figure out with your shield. And last tipp: If you still cannot make it, go somewhere else to level up a bit.
