The AR vs. split damage argument is older than Dark Souls. I'm of the personal opinion that uninfused weapons > infused weapons despite higher AR. The prime reasoning for this is that, even though infused weapons have higher AR, they are subject to 2 different types of damage reduction: elemental AND physical defense. Whereas, uninfused weapons are subject to just phyiscal reduction.

The first being their move sets. The second is the way the different katanas scale from stones.
I go with the katanas that complement my playstyle. Ie, Uchi, Berserker and Chaos. The other Katanas have enough of a different moveset in terms of swing speed and the way they scale differently from stones that I tend to stay away from them.
You will get more of a buff from infusing these katanas than say the Blacksteel. When you infuse an Uchi with Dark it gains the same bonus scaling from Dark as it does dexterity. So you need to raise 3 stats to increase it's overall damage.
The same can be done for Lightning (boltstone) or magic (faintstone) but only increasing dex and the corresponding stat for either one.
I prefer the chaos blade mostly as it has S scaling now uninfused. But retains the same scaling when infused. So it is a trade off you have to consider depending on the types of enemies you are going against.
I would never infuse a katana like the blacksteel as you gain very little from the infusion. It retains the S rating even when infused but it is a lower S rating as you gain less damage points from dex than if you left it uninfused. Also, imo the blacksteel is to slow for a katana compared to the other three that I prefer.
In the end it is all a matter of preference on the katanas and experimenting with them. Most of my opinion here is from experimenting with them and seeing how each one feels for my particular setup. And also what I am trying to accomplish at the time in game as I will switch them out for different infusions.

Ehm, is there a reason why you're acting like a total ♥♥♥♥ (although your avatar explains much)? I already played the game twice, this time it seemed fun to me to combine the use of hexes with dex based weapons. Isn't the whole idea of having fun with a game based on playing it like the way you want? I don't give a ♥♥♥♥ about what's considered to be meta or what an overpowered build is or whatever the hell you can think (with emphasis on try) of.

Honestly in my last three playthroughs I usually just rush to the Uchi at around SL 45. I obtain the Choas Blade around SL 65 and then I save load at Dyna and tillo for petrified dragaon bones.
I +5 my choas blade then I go back to the the lost sinner and kill him one or two more times to get 2 or three choas blades so I can either infuse them differently or so I have backups when they are about to break.
Ok, I'm definitely going for the Chaos Blade as well, sounds interesting. Going to infuse the Darkdrift then and not the Blacksteel. I agree about the moveset btw. I especially dislike the heavy attack of the Blacksteel katana.
