The one who sells tanite. Do her TT and TSlabs respawn?If so, how often?

She sells chunks infinitely after the last boss, but not slabs, twinkling and dragon bones... and, well, I never saw her inventory respawn...

She sells one Slab, one TT. I bought it from her, then it respawned. Is this just a glitch or?

She should sell 3 twinkling titanite, not just one... maybe you completed drangleic castle or killed nashandra? Could that respawn her inventory?

she only sells infinite shards, large shards and chunks, I guess.

That may be it.I was farming Nashandra for a bit(Easy boss, lots of souls) but as a phantom

She will never replenish her slabs or other upgrading material.
Edit: After getting the King's ring, Infusion material will be avaliable. Only sells three of each.
Edit 2: Tip> After spending around 20,000 souls, talking to her again will reward you with a Twinkling Titanite for free.

Well it won't work as a phantom of course... maybe you just forgot to buy all of them, or you did it with another character... because I'm pretty sure I bought all twinkling titanite and dragon bones and after a good while (talking about several days) they didn't come back.
