Just want to ride the trains; how?
Is there any way to just get on the train and enjoy the ride?

Yes, for me train sim is an idler. There is a whole genre where people go on YouTube to watch train rides. They put them on big TVs and fall asleep to them, read books, and things like that. It's not dissimilar from the lo-fi genre.

While it's true that I have no interest in fixing the train or optimizing the train rides, I do quite enjoy idling on a train.
Then yes jonathan_deck you could do it on foot, go to trains, choose a route, select timetable, pick a train, select on foot, and find a train and ride it. The only thing is doing it this way is random as to how long the ride could be.

To know how long the scenario it is best to select from the timetable a long route and once in the driver's seat stand up and let the AI take over you will be prompted to relinquish control, you say yes and have a seat.

If it's a passenger train just go into a carriage and sit down and enjoy the ride. If it's a goods train sit in the second mans seat. After a few minutes it'll ask if you want to give up driving the train. Select Yes and another driver will take over.

Cathcart Cirle has a loop run that starts and ends at Glasgow station. Fife Circle I believe does the same.

If you mean a continuous loop, none that I'm aware of. Each route has a start and a finish, whether it's the same place or two different locations.
