I clean install Radeon drivers (Version 24.3.1) just to be sure and from further searching found a thread on Reddit about UE4 and UE5 games hanging or app crashing with ENHANCED SYNC being enabled. AMD in their infinite wisdom enable it by default on supported GPU's and I'd never given it a 2nd look.
I turned it off and it was night and day - no more crashes. So of anyone sees this in the future and has the same issue, just DISABLE the Enhanced Sync feature in Radeon control panel.
