Off the top of my head, the newer M3's are 6-speed manuals. I think probably the majority of somewhat realistic racing games have 6-speed manuals .
There are a fair few 6-speed manuals ingame though, off the top of my head the Focus RS and Megane RS at least.
I see what you meant now... there are no 7-speed manual cars currently in the game.
I always want to use manual where it's supposed.. and paddles only where that is the original option.

The game is set up to reward that too - unlike Forza where no assists is always fastest, in Project CARS you're fastest with the most realistic setup. Trying to paddle-shift a manual car will have fairly slow shifts, but trying to stick-shift a dual-clutch sequential will be a lot slower too.

But if I'm ok with a 'real' 6 gear+ reverse I feel safe
I haven't driven the P1 in a while, but last time I did it was amazing - with TCS off you could give it the full Chris Harris and just drive sideways everywhere, balanced on the 900hp under your right foot.
