Delete default.sav and you will reset all except most "performance" graphics options.
You will need to reassign wheel/pedals, adjust gameplay options etc.
(Someone was kind enough to advise me that setting up a practice session on a race weekend would not hurt my stats any further.)
Practice sessions during a race-weekend still hurt your stats, even if you don't go all the way through to the race.
So as it stands, there is no way to practice without it counting as a "race" in your stats.

Once in the userdata folder you will see one or more what appear to be randomly numbered folders. These refer to any Steam accounts that have been used on your computer. If you have more than one user, I'm not really sure how you go about identifying them other than inspecting the contents of each profile folder for games they have played based on the data saved therein.
To make life even more fun, game data folders are also just numbers but here we are fortunate in that they relate to the "app ID" of the game on Steam. Of course, that's not overly helpful if you don't know how to find the "app ID" but I digress. What is nice to know is that Project Cars "app ID" is 234630. So, in that folder, you'll find yet more folders but these are all relateds to Project Cars.
Hopefully, now you know about all the numbers that at first look seemingly random, you can look at the above directory and fathom where the profile data is saved. It is worth noting though that since one of the recent patches, free practice sessions do not count towards races being entered and won or lost.
Hint: It involves default.sav
