I play with the drivers body turned off, as I use a wheel to play and don't want a duplicate of the wheel and someones arms in my vision, so I haven't encountered Vadimus issue.
you need to bind a button in the *in game* controls to center track ir/oc rift. also in the camera settings, in the "movement" tab you can turn off depth of field and helmet so the helmet cam is effectively cockpit cam. you can also disable all the auto movement from the in game head turning.
Once you have that set up to your liking, press ctrl-k and use numpad + and - to adjust FOV. Then use the seat adjust keys to put your seat where you want it.
You have pretty much full control, you just have to initially set it all up the way that you want it.
There are 2 keys you can bind for zoom in/out which adjusts the fov. It seems to change per car basis i believe. but you can also change them on the fly.
