Beard?

Don't own the game yet but was thinking about buying it and in a couple of things I noticed Max has a beard while in other things he dosen't. Just wondering why this is? (if it could be considered I'd rather if you just told me that it's a spoiler and leaving it)

No. You unlock new appearances by ranking up Max by doing various activities in the wasteland. I don't want to spoil anything for you guys so I'll leave it at that :].

I sense a Witcher 3 player...

You can't "grow" one, but you can choose from a few different styles / sizes as you progress.
