Max fends him off and Chumbucket comes to believe Max is "The Saint" based on some legendary prophecy. The dog stays with Chumbucket while the first version of the Magnum Opus is built. Chumbuckets first garage is then destroyed by Stank Gum and the dog is abandoned while Max and Chumbucket flee in the Magnum Opus.
Later once Max establishes himself in Jeet's Stronghold he returns to the old garage to find the dog unscathed and brings him to the Jeet Stronghold. From that point on and the rest of the game the dog simply lives in Chumbuckets buggy which can be taken out as a drivable vehicle instead of the Magnum Opus, the dog can be used to sniff out mine fields.
yah but what happens to him after the game?
The dog stays with chumbuckets buggy, wherever you left it. He's just a tool that finds minefields and has no part in the story after the opening.

Once the dog is put in chumbuckets buggy, he stays there for the rest of the game. You use the buggy and the dog to find minefields. That is all. He is not in any other part of the story.
Max leaves alone. The buggy and the dog are wherever you last left your vehicles parked since Max abandons everything and leaves.
The dog stays with the buggy, there's literally nothing else to know. You might as well be asking where do all of the collected vehicles go after the game, they remain abandoned wherever you last parked them.
If you want to imagine some happier ending, that's up to you, the game doesn't give you one.
The ending:
Max destroys the Magnum Opus, all of the work you were building the entire game, gone.
Max kills chumbucket, the closest thing to a friend he has at the moment.
Max abandons the dog along with all of his other collected vehicles.
Max leaves, the end. The game doesn't give you any other story about the dog, he's just with the buggy abandoned like everything else. It's a standard Mad Max ending, alone again with nothing.
*shrug* I wasn't really complaining, simply noting it in context of the dog
DOGS LIVES MATTERS
So yeah, dog left behind.
Max believes in no better life beyond the wasteland cuz it serves as an image that annihilates any conception of a 'beyond'. So he seeks eternal rest WITHIN the ruins of the fallen world - basically, he is on an 'eternal voyage', never to arrive at any destination, just driving on, without 'end'. The game has a superb way of showing this - when you leave the bounds of the habitable world, there's just endless dunes, you dont die but you drive on without ever reaching anything, it becomes unbearable since you're rushing into nothingness, yet you persist, you still exist, since there's nothing left but void. You can't really die in a wasteland world, you just melt into it.
