Some will unlock as part of the story, but for the most part, you will have to collect & unlock them.
To collect cars from enemies, try not to damage the vehicles you encounter too much, & instead try pulling the driver out of the car using the harpoon,........this will stop the car. Once you have dealt with the immediate enemies, get out of your Magnum Opus & get into the enemy car. If you don't have that particular car in your collection, the game will tell you to drive it back to one of your strongholds (ally camps) to add it to your collection. Don't worry about the Magnum Opus, Chum will drive it back. Once you drive that enemy car back inside one of your ally camps (Gutgash, Jeet, Pink Eye, Deep Fryer), presto, it adds it to your collection.
To unlock some of the Archangels you will have to complete Death Runs (races) & use that particular Archangel in that race & win with it to unlock it. If your missing a certain Archangel, it will show which Death Run location unlocks that car. So just drive to that location & use that Archangel in the race & win it, then presto, you've unlocked it.
However, there are some Archangels that can't be unlocked from racing in a Death Run & are actually hidden around the map for you to find. Don't worry, they're not TOO hard.
I hope that helped. Best of luck. :)
You're welcome. :)
