whats the point of upgrading the harpoon if you're going to use other cars not the magnum opus

You are going to need it to pull down some things. There are also times where you are forced to use the Opus.

Harpoon is a very handy tool used to do a variety of things. For example you can rip off enemy car parts or destroy larger structures.
You can't do that when driving other cars.

Why wouldn't you upgrade the harpoon? An infinite-ammo piercing lance, restricted only by a brief cooldown that OHKOs anything on two legs and rips apart steel structures and vehicle armor?

To be NOT OP and boring. Thunderpoons are especially instawin.

But OP's title is wrong, it's the opposite - there's a lot of other vehicles in the game but there are little reasons to use them.
