I'm having trouble calling plays for specific players

I watched a bunch of youtube videos that say you "tap LB" to bring up the player icons, and then you hold down that player's icon button, and then you can call a play for them.

In fact, tapping LB just brings up a list of general plays. Pressing the direction key just brings up a list of different plays.

Can someone explain to me how to call plays for specific players, how to call general plays like "pick and rolls", and just explain to me how this works, I've never been able to call plays the way I want to.
