Kenshi
The ability to order weapon from the smith
The ability to completely skip weapon and armor crafting does not exist in an organic way in the game . The highly skilled weapon smith in the game, should accept your order of weapon at least up to lower grade edge 2 just like the ones you make at your own base.
And armor, player made armor should not be in same or higher quality than the ones found, just like weapons. It doesn't make sense you can make best quality armor and cannot do the same with weapon, I mean those armor in the old time should have high tech components that the current world doesn't have. Again armor job should be made available by the talented armor Smith in town, instead of going from town to town looking for that specialist armor type.

I'd agree with this if there were something like a Meito class for armour pieces - segments that you can only find one of, short of cheats or exploits.

Gear that's better than anything you can ever make yourself, though, continuously spawning on vendors? As in, the way the game currently works with weapons? I'm not a great fan of that.
The best weapon smiths are the skeleton smiths who cannot make edgewalker and only make stuff for other skeletons (and not outcast skeletons). Armour king officially is the best armour smith in terms of what he has in stock but has actually no skill in armour smithing.

Armor king should not be selling the best armor in game, because just like edge 3 weapons, finding them is a more lore friendly thing imo.

Why? I'd get it for some high tech industrial grade mech stuff but ... it's Armor ... and ... melee weapons ... without specific tech features.

Why should player characters not be capable, due to extensive training, experience and research not be able to craft highest tier armor and weapons except of Meitou?

Thing is, your idea doesn ot make sense based on the lore as the absolute UBER weapons, Meitou grade, are not just crafted now, they are relics, craftes decades or centuries ago by masters that have even died a while ago.
Going to a random smith and ordering something like that would be even more hostile to the lore then the player characters being able to smith stuff up to top tier

Besides ... the smiths in game actually have quality ranges, making sure that you'll never find some Edge 3 in some inexperienced backwater smith shop, there for going to visit the Skellies if you're looking for some prime weaponry actually is pretty much natural.

Agree, 240 days in I has an Scorchlander armor smith who done nothing but leveling armor crafting since day 10 something to level 86, 12% chance for masterwork.
Use a lot of modded armor for look so need armor crafting.
For weapons the scraphouse solves this issue, keep visiting it.
If stealing I would use 2-3 characters the thief and the decoys. Honorable you can just buy them 35K is 10 skeleton repair kits. Or you buy the house and add an crossbow locker :) Also visit the robot limb trader, not having speed legs feels so slow.
And vulnerable, with special or masterwork scout legs running trough holy nation area including rebirth was not dangerous at all.
