This is in Vain. The Hive village west of Hub. 3 are for iron nodes with 120 % efficiency.
Sorry to tell you, but there are no 3 worker copper nodes and the number of workers is not even that important. It comes down to max efficiency and Vain as mentioned has 100%.
The also mentioned Hive Village has 4 or 5 nodes in close proximity
Your other question is something i do not understand but thats most likely on me because mining is horrible and miners deserve Rebirth to repent
Each region has a multiplier per resource, which is calculated on the mine yield.
Ashlands has a multiplier of 0.7 Black Desert 2

2. Yes copper productions is dependent on the region multiplier. It affects both manual labor and automation. There are no veins, only nodes,
I think late game when you research up it's not about people as efficiency so you'll have more copper than you know what to do with.
