How can you get to the point where one guy can fight multiple beak things safely???
LOTS of practice. By that point you'll probably be rich enough not to need to sling hash anymore, lol
IMO the best way to deal with the beak things is to scout ahead carefully and take a path where they won't see you. Go at night, so their vision is worse. They are just too fast to reliably outrun, especially when you are loaded down with bags of "legitimate goods."
And this is why the tech hunters pay big buxx for their weed. It's the Beak Thing Tax!

If beak things aren't that strong I really don't want to know what is...
Have someone with decent toughness, a polearm of some sort, and 40+ skill or so and they will mop the floor with 3-4 beak things easily. High enough toughness and some armor and they'll mow through a dozen before needing to rest.
Also, even if you can't outrun beak things in a straight line, you can zig-zag. They have a long windup on their attack, so they need to get ahead of you and start to attack hoping you run into it - so you change direction once one gets ahead of you, forcing them to change direction to get ahead once more. They tend to turn pretty clumsily when running, too. Eventually, they sometimes give up and turn around, or if not, you can lead them into something else to fight then book it out of there.
