how can you kill an unconscious enemy?
I knocked the guy down but he keeps waking up. I want to loot his house!

In vanilla you cannot. But there is a mod called Execute enemy that adds death items to people you can remove to kill them.

Imho it´s a good idea to set the chance of death ratio in the advanced settings when starting a game. Set to 2 is what i do now - and set to 3 makes it almost sure everyone dies when they got hit with enough cutting damage. With 2 sometimes they get back up again with lower combat stats and lower end weapons - most of all Shek people. With the default set to 1 people rarely die, which could be rather annoying if You e.g. have a base and turrets, which will always be manned in that case and it takes forever till a group is wiped out for good. Also You can carry away unconscious people.

Just remember the same death rate also applies to the player, so also your charters will be easier to kill,

Use weapons with a lot of bleed, cutting weapons.
If you hit beat him up enough, he'll die. potentially of blood loss.

Blunt damage weapons don't usually kill (with exceptions).

Once he's down, remove his armor, next time he gets up he only has toughness as protection.

Pick him up and drop him off in a nest. If it's a hostile faction , you can simply dump them at a hostile (to them) faction's "place". They'll get attacked as soon as they're conscious.
