The only workaround is to make a dedicated undershirt crafting station with a high production speed. Such a mod already exists, as it happens.

OP, notice those production times don't happen on weapons, or on the heavy armor crafting station...or even making pants or assassin rags on the leather/cloth benches. It's specifically leather shirts and (I think, but they're certainly not AS bad) chainmail.
Depending on the situation, you can take advantage of this, if resources are very tight, you can try to make some leather shirts to stretch those resources into as much skill gain as possible - which in turn pushes your crafting closer to being at an acceptably profitable level.
But yes, for the most part, extraordinarily long shirt crafting times are just a moderate annoyance.
You could bump up production speed to shorten the craft time during the start of the game but other than that, mods.
