Do turrets require ammo?
If so will someone assigned to one shoot on sight? and will they go for food on there own if this is there only assigned job? tah

Turrets do not need ammo. And characters assigned to turrets will sometimes get stuck to them and not go looking for food unless the barrel is right next to them.

Do not just assign someone on turret without job because they will man the turret indefinitely without eating, assign your character to actual turret job with shift + man turret so they will get food when they're hungry.

Oh. Is reloading just about fire rate then? Wondered why ammo held up so well in the crossbow bolt box.

If you click on the turrets there's a loaded stat. When they're firing you can see a little bar refill constantly from 0 to 1. Assuming now this is just ROF mechanic and no ammo need be present.

Its just a rof mechanic, yes.
Ammo is only for the carriable crossbows, those can eat plenty of ammo.

Especially right before you find labs full of security spiders it seems.

I'm going to be setting up my first base soon and I'm wondering about how to set up the turrets and not run into problems like starving to death. I want to have a small group on them 100% of the time and then another set of turrets for larger conflicts. I was going to set it up like \_/ where the slashes are walls with turrets and the underscore is the gate, so incoming people have to walk past the turrets and are in view the entire time.

4-6 turrets each with their own ramp always works for me. Tho i hardly use turrets any more after i found out about the mystical defense of the Crabs. !-2 Elder crabs an you can say goodbye to any raid in seconds...

Couple of things to note with turrets:
Turrets have 360 deg swing, BUT guards do not swing with them - this means that a straight line of turrets close to one another is prone to friendly fire.
Armors that negatively affect crossbow skills also negatively affect turet skills, which means more friendly fire.
Because of this, also check your turret guards after every fight in case of friendly fire - turrets do a ton of bleeding damage, so you may need to patch your guys up quickly.
That being said - I noticed that watchtowers do not seem to have friendly fire issues due to sheer height.
Also - keep helmets on and don't send your melee guys if turrets are firing - turret damage can be quite deadly - not only due to raw damage, but also bleeding.

Highest tier walls, the ones with "balconies" - I noticed that turret guards are getting stuck there sometimes.

If you don't have enough skellies to man the guns, put food barrels right next to guards, or keep pack animals with food on them in the same squad very close by.
Skelies are also a bit janky if you have anyone on "rescue" duty - so keep that in mind, the game seems to not understand that skellies need their special repair beds, and resque guy will put them in normal bed isntead.

Having a dedicated medic helps a lot.
