Training animals
How does one train their animals and how long does it take to grow them?
Do you just follow standard methods like overencumbering them to train strength?

I bought a pack bull on for some reason it has better turret and precision shooting skill than my turret operators -_-

The more they fight, the better they get at it. Garrus and Goats are fast runners. That makes them ideal for expeditions. Both can fight effectively in their own way. Bonedogs can deal some heavy damage. It is best to pick them up early and have them fight often. They lack speed, but once trained, can help defend the settlement or help during major attacks. They can do some serious Kung-Fu. Bulls are slow. That's a serious liability when the Beak Things or Holy Paladins want to play with you, so I don't bother with them.

In terms of carrying capacity, just carrying the normal stuff will do well enough. It makes no sense to over-encumber a Garru. By the time their Athletics go up they should be able to handle an expedition's loot.

bulls make excellent sharpshooters, put him on a turret and he will take care of business.
