does dodge affect fighting with weapon?
if i have high dodge stat, would my character use dodge while fighting with weapon?

Nope. Not at all. You have to successfully dodge to get the xp. You should have no armor on or lighter armor that doesn't impair your dodge. That's why it's better to capture a bandit and fight him with no equipment on while in defence mode. Your character will just dodge repeatedly.

This is probably true (untested myself, but that's how all? of the skills work when it comes to xp in this game) since it your xp gain is calculated at the debuffed skill number.

Tough this DOES require you have a decent chance to dodge in the first place, since you need to succeed to dodge to gain any xp towards it at all. Wooden backpack is nice, since it's a flat 0.5x multi and doesn't require you to micro that much gear.

Also, you still need to watch the encumbrance, since xp rate gain on dodge is less if you carry over your limit (the more the worse % rate of dodge skill gain)

Keep in mind, more dodging means less toughness Xp too. Not a big deal to people who Play Dead exploit though.

but the description says " getting hit while stumbling ", i am not sure how it goes actually, but it somehow work on my character.
when my character successfully doge an attack, the exp bar didn't goes up( could be my dodge skill is too high), when my character get hit while fighting unarm, the exp bar goes up very quick.
my guess is that it is for balance, it wouldn't make a lot sense if you gain dodge exp only by performing successful dodges. how would you gain dodge exp early on if that's the case, you can't dodge in the beginning at all.
and kenshi is kinda "punish and reward", punish your bad performance by cutting you down but reward you with experience point so you can come back next time stronger

fight a gang of enemies and your dodge is useless, i constantly get hit even when my dodge are 60 ish

am i doing it wrong all along? i have been putting ♥♥♥♥ ton of armor on my character just so i can get more dodge exp. the result is i constantly get beaten up, enslaved. i have 61 toughness, 87 stealth and only 66 dodge ( all my toughness and stealth are gain from use sneak while playing death and then bandage myself in band of bone camp and rebirth)
i want to cry now

Stumbling is the goal.

So, if you want to Stumble to raise the chance of getting hit, which will give you Dodge exp, then you want to lower Melee Defense.

A rusted junk Katana has a -5 Defense penalty.

Samurai Armor has a -8 Attack penalty.
Samurai Armor has a .60 reduction to Dodge.

So, if you had a rusted junk Katana and wore Samurai Armor plus whatever else you could stack on to debuff Attack (to make your sparring partner last longer) and to debuff your Defense (to make you have a higher chance of stumbling) you'd have optimal conditions for raising Dodge. The penalty to Dodge will help the character be hit more often. (Unholy armor has a better Dodge penalty, but not as much Attack reduction. It's a tossup, I guess.)

The heavy armor will also allow you to mitigate more incoming damage, taking more hits, with more chances to Stumble.

IF the Wiki is "true."

There have been instances when knowledgeable players have informed the rest of us that the Wiki is full of lies, too... :)

A good sparring partner with a weapon with +Attack, like a Wakizashi wielded indoors, would/should suit very well.

If the character wasn't wearing heavy armor, they wouldn't last very long in a fight "tuned" for Dodge EXP gains.

Note: I have never tried to train it, so there could be experiences that are more effective than this theorycraft, based entirely on Wiki info.

Notice it says "fighting unarmed" will gain xp. So to train it to start, I left my guy fighting unarmed against a bandit and on defense mode. 1v1, and the bandit had no weapon either. Because i did this at the start, the bandit was gaining skill in martial arts but I was gaining equal skill in block. I got it to around 30 before I had to find a tougher opponent.
