If you are getting all research via blueprints, then yeah you gotta research it. Blueprints don't work unless you have prerequisite research. Most require that you have a minimum level tech bench. These combine so that you need to build and upgrade tech benches, at a minimum, before you can unlock all the research.
Once you have identified what exactly you are missing, its possible to create research and/or blueprints to unlock most things.
Armor is less intuitive: What you want are Armor Blueprints. Sort of like selecting clothing, only you select the catagory Armor Blueprints instead and select all. The upside is that you may accidentially unlock armor that would otherwise not be unlockable.
I actually created a character just to fix a mod that had mistakenly taken away the starting player research using just such a character. Torso Mod fix.
If you just want to craft everything from start without research, several mods exist that already do that, although many are themed as the player being a god, or a scoundrel, or one of the main characters in the game.
If you like modding, one trick is to learn by looking at other people's mods. You can do that by finding the mods in the workshop folder, making a copy in the Kenshi mod folder, then renaming the folder to the name of the mod. Then you can load other people's mods in the Forgotten Construction Set and find out how they did things.

Note: If you want to create your own unlock all armour blueprint, make sure you go through the list and remove the REFERENCE armour, or it will crash the game.
