It's immensely helpful to get the armoured rags + skirt + martial artists bindings as 0-10 Is the hardest part of leveling MA and this combo puts you at 12, even better if you get assassins rags.
It's a lot easier to just focus on toughness to start out.
Going in 1 on 1 against something high level enough to actually give you good skill is pointless as you will get stun lock pummeled into the floor boards.
If you surround him with 3 idiots though, thy each have openings to test their moves. They will still mostly just bet smashed in though so you'll need armor to survive it.
Then again, it all depends of your definition of "cheese".. Eventually, your dodge will get high enough to start learning attacks regardless so just keep taking those beatings.
Another way if you already have strong warriors is to just take off their swords and make them fight river raptors keeping all of their armor on. Once they get pretty good at fighting river raptors train them on leviathans because they have enough hp since stronger characters will do too much damage to train unless you starve them.
Eventually you'll stop getting your ass kicked, between a high Toughness and Dodge skill and be able to stay in fights long enough to land some punches.
