Just depends on the kinda game you're after. You CAN absolutely die, by the way, just more likely that you'll lose a lot, slowly regain consciousness, and drag yourself to the next encounter. Personally, I like to start with an entourage, but there's definitely an appeal in starting rock bottom by yourself.
The mode isn't necessarily unplayable to beginners but it will force you to think about your moves which helps when you want to immerse your self in this game.
Rock Bottom starts is also one of the most powerful starts if you start knowing what to do since you have a free prosthetic slot and prosthetics are powerful.
