The Crop Yield is the success chance to harvest the crop, so at 100% you get 1 every time and at 10% you get one on average every 10 crop you try to harvest.
This value is also multiplied by the Harvest Yield with your farming skill (51% with no skill but quickly goes up to 100% after harvesting just a few fields).
So early on I think you would only get 5% green fruits in arid I think.
Cactus + Wheat works great for food in arid and hemp for fabric, I get a lot more food than I consume in my arid base with 15 characters and 3 animals.
Once you planted your crops they keep giving fruits without having to plant more, so it is possible to grow green fruit in arid but I think it would be a waste of time.
