Stealth is considered over powered. Keep your stealth unit unburdened by weight & train up assassin (preferably on targets that can be outran in case things get dangerous).

Scorchlander & Hive Prince seem to be the most obvious thieves however any race can become an op stealthy unit with enough time & training.

Avoid gear with stealth penalties unless using equipment/robotics than can counter the penalty.

Consider both Stealth build & Crossbow build to be playing Kenshi on super easy mode. (For different reasons of course)

Hive Prince is 100% the best for stealth skills. I recall joining the assassin/thief faction in The Hub to be a remarkably easy way to start, too. I forget what the fee is to join, maybe 15k, but then you have free access to their lockpicking and assassination training dummies, as well as a merchant for fencing your stolen goods.

For power-training stealth, just go to a town and sneak from one side of town to the other. Your sneak will be through the roof in no time. Another way to do it is find a friendly caravan, go into sneak, and follow them on their route. Either way make sure the eye is red or yellow, or you won't level.

The other thing to consider is training strength and athletics as high as possible, which you might want to do first. It doesn't matter how high your thievery/assassination/whatever level is if you can't escape when you get caught. High level enemies run FAST, and the most valuable things to steal (weapons/armor/tech) are gonna weigh you down to a crawl if you don't have the strength. Strength trains from running with a heavy load; athletics trains from running with a light load.

Edit: leveling strength and athletics gets pretty easy once you get enough of a good start to outrun most hostiles. It works the same as stealth in a town, but with the whole map: right click a far corner of the map, go do something else, come back and click the other corner of the map, repeat. Of course pathing can ♥♥♥♥ up or there might be the random speedy enemy, so keep saves or keep one eye on what's happening.
