I already got about 460 prisoners and more money then I need, so lately I've been working on trying to optimize my prison more.
its getting harder though, I initially made my main hallways 2 units wide cuz I figured I'd need it later, but already 2 units is BARELY enough at high-traffic areas...
since theres no 3 unit wide doors I built more doorways into some rooms, but the stupid inmates seem to rather crowding around one enterance and not being able to get through then go to the other enterance 6 units over...
basicly though, thats half of the game.
There are mods that do that.

Yup, that's what I would be doing in your situation!
If you want to save on costs and only have one canteen, but don't want this problem of the single canteen being too far away, then design the prison with a short distance from cell to canteen in mind in the first place...
The whole 'multiple kitchens and canteens' thing is supposedly much better to manage with the latest alpha, if you're playing that one. Watch the latest alpha videos.
Get a yard nearby and arrange yard time before eating as an example. This will ferry them towards where you want so they are nearby when it comes to eating.
