For Laundry and Cleaning Cupboard, that number is 80m².
Generally I make the Workshop 16x15 (18x17 Including Walls) so that I can align a Laundry or Cleaning Cupboard next to it at 16x5 (18x7 including walls).
That way every work room has 20 jobs. I don't know about Kitchens though as I never allow prisoners to work there, so I've never bothered finding out.
But still, do I need a certain number of press and saws? or does the size only affects the number of workers? (but I can conclude that the number of saws and press affect the total "productivity", right?)
However, they will need objects to work on if you don't want them standing around twiddling their thumbs during Work time. So yeah you'll need 15-20 in total of Saws, Presses and Carpentry Benches. Some prisoners will be moving stuff around so they won't always need objects to work on, but I put 20 in anyway.
Also be aware that for the Workshop Induction Program each prisoner attending will require a Workshop Saw each, and for Carpentry Program they'll need a Carpentry Bench each. Those will be the limiting factor to the number of prisons able to attend each program.
So, plan accordingly.
