How long do you assign "work" per day?
How many hours average do you have work in the schedule per day?

Depends on your Regime. Education courses need a 3-hr block, most everything else is 2-hr. Stagger it by security levels if needed, but I usually average 8 hours per day for the orange guys.

Each sec gets a 2 and 3 hour block. they are staggered so I can re-use rooms.

mhh, i usually just let them have 3 hours and 2 hours, with some time in-between,
so a total of 5 hours of work per day -w-

Personally, 8 hours works best. This way I don't sacrifice their need over profitability, and on top of that, I do schedule the work before meals (except breakfast, of course) so my understaffed canteen can get the food out and get the dishes cleaned with the help of the prisoners.
Also, in some prisons, my workmen have a hard time catching up with what the prisoners produce in the workshop, so a long lunchbreak (2hour meal, 2hour Yard) takes care of that too.
8 hours in a row and one hour after the last meal to help cleaning the canteen and kitchen
