20 person limit for workshops and other chores
In my latest prison I made a HUGE workshop that could easily fit 40+ workers with enough space around each workstation so that the prisoners wouldn't bug each other. Is there a reason why a limit is set at 20, no matter how big you make it? I would rather have one giant workshop instead of many multiple smaller buildings.

I think only the devs know why. Just make more of them. 240m² is the max you need for 20 workers.

Rats. I was hoping for some kind of logical answer that the devs had given at some point stating that 21+ prisoners sent away for murder in one room with power tools would generally be considered somewhat a bad idea. But that's why all my guards are authorized to use lethal force if necessary. Some o' them food fights in the canteen can get a bit vicious.
That's my own personal reason for the limit, actually! The number of lethal fights that have kicked off in one of my workshops when i've been lax enough to forget to move a guard there, or set up CCTV... ;)

Workshops programs have to be supervised by a foreman, so the 20 person limit makes sense for them. As for cleaning cupboards etc. I don't see why there should be, but it does encourage you to service different parts of the prison I guess?

Sure, but since this is a 1 floor only facility, as you grow in size space starts to become precious. Even after this latest update w/ bug fixes I still have issues of which workers are assigned to which kitchen, so I just have 1 massive kitchen/canteen. It can take 15+ game minutes for inmates to get from wherever they are to wherever they are going. If a foreman can only handle 20 inmates at a time, but I have 30+ elligible workers, then create Supervisors: employees (or well respected and deserved inmates) that oversee the operations of one large system or a number of smaller workshops spread over the entire campus that work under the Foreman.
As far as guards go, I usually have 1 guard set for each room (with the exception of cleaning cupbooards and stockrooms), 2 guards per 50 inmates' cell wings.

I am doing a 1K+ single massive kitchen/cantina. It works fairly well though the prison is still filling up.... Have to see if it can actually handle the full population though. I shared an earlier version of it I believe but can share the current if you are interested.
