You also need to fill a 'room' with probably at least 1 prisonner before it becomes avaible.. cooks don't cook without people to cook for.
1. your main entrance is unlocked, that creates an insecure area, that your prisoners arent allowed to pass (this should fix the errore message of your dormitory)
2. you have some outdated mods installed, to find out deactivate them. Its a mod that overwrites the canteen with the old room defintion (i think pre A32 or sth). Most likely Grant mods copied an old materials.txt, but it could also any other mod, too.
away from that, i would remove the door to the shower room, and marke the shower room also as dormitory, so that the shower are within the dormitory. this has to positive effect, that the prisoners can use the shower also on lockdown time.
edit:
btw that your doors all stay open is not a bug, as long as you have no prisoners. this makes it easier for your workman to build up the prison, but you unlocked the main entrance door manually

nope, this message wouldnt have gone away. This message what you mean, is that there are no prisoners assign to this canteen. This shows up in the canteen itself, well it would have shown at the screenshot, if the mod would have been up to date or removed.
