Circuits. How to wire up the door for a trap?

Greetings,
You know how imates will go out to open areas of a prision to pickup contraband that is thrown over fences like cell phones etc? Well, I was thinkin' I could make a sort of honey pot for them. Something like a man trap. But I can't figure out how to wire up the door.

if switch is on AND stepped on pressure plate
then shut door
if switch is off AND door is shut
then open door

That sort of stuff. But it would seem I need to store a variable to do this?

I used to think of this. I had my entire perimeter fence area accessible by one door. Then on that doorway I put a metal detector and dog patrol. Every single prisoner who goes out there comes back with contraband, but still some stuff gets through unsearched if I'm not paying attention, so I pretty much just adopted the exclusionary principle and made it all staff-only out there.

How about something like this: you create a fenced corridor 1 tile wide and about 10 tiles long. Place around 10 pressure plates and at both end add doors and servos. Place a logic circuit on NOT setting. Link the plates to the circuit and the circuit to the 2 doors. This way, both doors should stay open. As soon as someone enters the corridor, the lights go red, and the doors will close after a few seconds (that's why you need a long corridor, to allow time to pass while your guy is walking). So now your prisoner is trapped by both doors. You could place staff doors instead of jail doors, in case your gardners might like to visit the area. And you could also link the pressure doors to one or more indicating lights, so you can get a visual cue that someone is stepping on the plates.

Large jail door can have two door servos. So put two pressure pads in front of a large jail door connected to a door servo which is set to Open on trigger. And two pressure pads behind the large jail door connected to a door servo set to Close on trigger. Only people coming from the front will be able to enter, people coming from the other side get a closed door in their face.
