press Logistics -> Prison Labour, and then assign workplaces for your prisoners by clicking multiple times on rooms with working places (shop, cleaning cupboard, workshop, etc).

If you don't do that, prisoners will never work.

I believe under the "Programs" tab there's programs they have to go through first to learn how to do said job. I'm not sure about laundry or the shop, but I know in order for them to work in the kitchen they have to have gone through a program and passed it first. It's in the same options as the parole hearing. Although, I recently started playing this game and am still figuring everything out. As for contrabands, make sure they have no access to buildings that would have weapons or knives. I wouldn't ever have anything over Medium Security prisoners working in the kitchen. Even when a prisoner goes to the infirmary they have a good chance to snatch some scissors. Do shakedowns every once in a while and have your guards search them and their cells for contraband, preferably at night that way it's organized and they won't be able to use them when they're out of their cells during the day.

F12 is the default screenshot key, from there you can find your screenshots of the game under the game's tab in your Steam Library, there should be an option to either "Share" or "Upload". Make sure it's public, right click the image and copy the link.

Under "Regime" make sure they're scheduled to work. There should be an option to do either "Work/Freetime" or "Work/Lockup". Meaning that if they have the ability to work, that's what they'll do, if they can't then they'll do freetime or lockup. It looks like all your prisoners are scheduled to be "Yard".
