Gangs exhibit various group behaviours. Other than that, if all prisoners are angry at something, they might look like a group when it's just every single one boiling over roughly at the same time. There is also a Reputation trait "Instigator" which makes a prisoner a makeshift leader who others will imitate in violent and disruptive behaviours.
Snitches will be attacked by prisoners with little to lose, there's little planning there.
