Which Champions are worth RANKING UP?
Ascending is easy but Ranking Up costs rare resources (especially chickens). So I must choose wisely. Any advice on which Champions I should be Ranking Up?

none they are all trash or only used for faction war , keep ur mats for better mobs.

this game is a marathon not a sprint.

Only very few rare champions are worth ranking up. In general, the higher the rarity the more champions are worth ranking up. I personally usually look at some online ratings for the champions and then consider if the utility the higher rated champions provide is something I currently need.
